About the association ACC is an association of coffee growers from the central region of Cauca, a department located in the south of Colombia. The association was created in 2016 in Piendamó, Cauca, with the purpose of improving coffee quality from the region; trying to impact growers all the way from the crop until the delivery.The origin of the association comes from Robinson Rivera, an emblematic coffee producer from Piendamó. Although he is very young, not wealthy and did not have the opportunity to finish middle school; he wanted to impact the people around him that were commonly involved in the illegal crop trade. Hence, he started an association seeking to add value to the coffee of the associates in order to get a better income so they would eventually decide to swap the coca trees for coffee trees. With this idea the Association of coffee growers from central Cauca for peace started in 2016.
Honey Process
1) Coffee is picked very ripe so the sugar content is higher. 2) Floating process: Floaters are removed to have only the good stuff for processing. 3) Oxidation process for 12 hours in the washing tank. 4) The coffee is pulped and stored in the reception tank for a 36 hour fermentation in mucilage. 5) Drying process: The cherries are moved to a parabolic drying system until 10% moisture is reached (5-6 days).
