Expect a medium-heavy creamy body with chocolate and hazelnut notes. Delicious on it's own or paired with milk for a satisfying low acidity cup. \u003c\/p\u003e\n\u003cdiv\u003eRipe cherries are selected via mechanical separation then fermented in open tank for 48 hrs before transferring to the drying patio. The cherries are then sun-dried slowly for 15 days on patio turning regularly for even drying to 11% moisture.
